Spicy Chicken Sandwich

I found this delicious recipe online and decided to make a few modifications. Every time I've made it for my family it has been a huge hit.


Estimated Cook Time: 30-45 minutes

Serves 4 People


Ingredients

2 Large Boneless Chicken breasts (Cut in half to make 4. Perfect size for hamburger buns)

1 Cup of Buttermilk

2 Tbsp of Hot Sauce

1 Tbsp of Salt

1 1/4 cup of Flour

1 Tbsp of Pepper

1 Tbsp of Garlic Powder

1 Tbsp of Onion Powder

1 Tbsp of Paprika


4 Burger Buns

Lettuce

A Jar Sliced Pickles


Canola Oil to fry


Sauce

1 cup of Mayonnaise

1 Tbsp of Paprika

1 Tbsp of Hot Sauce

Splash of lemon juice ( if you prefer )



1. Prep your chicken: Combine chicken, buttermilk, and hot sauce in a bowl or refrigerator bag. Keep in refrigerator for 1-2 hours. This allows the chicken to become nice and tender.


2. Heat your canola oil in a large pot to 350 degrees or splash water and when you hear a sizzle you know its ready to go.


3. Combine your flour, salt, garlic powder, onion salt, pepper, paprika on a plate. Remove the chicken breasts from the buttermilk and hot sauce marinade, and place in the flour mixture. Coat well.


4. Place your chicken in the canola oil, and let fry until golden brown. ( I recommend only cooking 2 at a time) This is the tricky part, some say it only takes 4 minutes on each side. It truly depends on how thick your chicken is. It takes a good 8-10 minutes on each side for me to get that golden brown.

Once you have the right color, poke your fork and check to make sure you can't see pink inside.


5. Take your chicken out of and place on a paper towel to allow it to rest and release the oil.


6. Sauce: Combine your mayo, paprika, and hot sauce. Add a splash of lemon juice.


7. Now its time to put your sandwich together. Place lettuce on top of the bottom bun, add a scoop of the sauce, top with chicken, add another scoop of sauce and a few pickles. Add your top bun and enjoy :)



This recipe goes great with my homemade baked french fries, or if you want to be healthier my sweet potato fries, or mac and cheese.
