Are you craving a healthy spicy cajun dinner? I found this quick 20-minute recipe in Chrissy Teigen's cookbook and made a few of my own changes.

Ingredients
1 1/2 pounds andouille sausage, cut into 1/4 inch thick
3 Cloves of Garlic (Minced)
1 Tbsp of Olive Oil
1 Large Onion sliced in half moons
2 Large Green Bell Peppers, Sliced
2 Large Red Bell Peppers, Sliced
1 Large Orange Bell Pepper, Sliced
1 Large Yellow Bell Pepper, Sliced
2-4 Tbsp of Cajun seasoning ( add as much or as little as you want for taste)
Salt and Pepper
4 Cups of Rice
1. In a large skillet on medium-high heat add olive oil, and sausage. Stir occasionally, until browned, about 5-8 minutes.
2. Add the onion, bell peppers and Cajun seasoning, garlic and cook, stirring until the onions and peppers soften and brown, about 10-12 minutes.
3. Serve over cauliflower rice, white rice or cabbage (from Chrissy Teigen's original recipe)
