Chicken Gnocchi Soup

Do you enjoy Olive Gardens chicken Gnocchi Soup? Then this recipe is for you. Found this delicious recipe on Pinterest, and made a few of my own modifications.

Estimated Time: 30-40 minutes


Ingredients


3 Chicken Breasts

2 Tbsp of Olive Oil

5 Tbsp of Butter

1 Small Onion (chopped)

1/2 Cup of Celery (chopped)

1 1/2 of Shredded Carrots

2 Garlic Cloves (minced)

1/4 Cup of Flour

5 1/2 Cups of Chicken Broth

1 Cup of Milk

2 Cups of Heavy Whipping Cream

2 Tbsp of Parsley Flakes

1 packages (16 oz) of Potato Gnocchi

1 1/2 Cup of fresh spinach

2 Tbsp of Garlic Powder

2 Tbsp of Onion Powder

Salt and Pepper


Directions


1. Boil water in a large pot on. Reduce to medium to low heat and add your chicken breasts. Cover with lid until chicken is cooked. (see step 8 for chicken instructions)


2. While your chicken breasts are cooking, In a large pot, melt butter, olive oil.


3. Add garlic, onion, celery and carrots. Cook until onions are transparent.


4. Whisk in your flour and let cook for about 1 minutes, then slowly stir in your chicken broth and let simmer until the broth starts to thicken.


5. Add your milk, and heavy whipping cream and bring to a boil.


6. Stir in your seasoning. Add season to your desired taste


7. Lower the heat, and add in your gnocchi and let cook for about 10-15 minutes until gnocchi is soft.


8. While your gnocchi is cooking in the soup, take your cooked chicken and shred it with two forks. Add the shredded chicken to the soup.


9. Add your spinach and let cook for 5 minutes until spinach wilts.
